Add flour mixture to butter mixture, mix until just combined.
Add 140g of chocolate and stir in.
Using a 1.5-tbsp cookie scoop, form dough balls.
Using your thumb, create a well.
Insert 3 mini marshmallows per cookie and seal the cookies shut.
Roll the dough balls in the rest of the chocolate (except bottom of cookie).
Place dough balls in container and store them overnight in the fridge.
Baking Time
Preheat oven to 350°F/175°C.
Bake cookies for 15 to 17 minutes.
Remove from oven and let them cool on the pan for 3-5 minutes.
Transfer the cookies to a cooling rack.
Final Touches
Place some mini marshmallows on a heatproof baking tray/mat and brulée them with a kitchen torch.
Place 3 toasted mini marshallows on each cookie.
Add a sprinkle of sea salt on the top. (optional)
Serve and enjoy!
